Optimize costs and control inventory. ***Hotel Flor de Mayo*** Seeking **Sous Chef** **Position Objective** Supervise and execute daily kitchen operations, ensuring gastronomic quality, dish presentation, cost control, hygiene, and a culinary experience aligned with the hotel’s concept and standards. **Operational / Administrative Responsibilities** * Supervise food preparation and presentation according to standard recipes. * Ensure dish quality, flavor, and presentation. * Coordinate daily kitchen operations during service periods. * Verify production and dispatch timelines. * Supervise workstation setup and cleaning. * Develop menus and culinary suggestions. * Control inventory and input rotation (FIFO). * Submit requisitions for food and raw materials. * Monitor shrinkage and optimize costs. * Recipe costing. * Ensure compliance with hygiene and food safety regulations. * Supervise proper food handling practices. * Maintain cleanliness standards in kitchens and storage areas. * Train and guide the kitchen team. * Supervise staff performance. * Promote teamwork and operational discipline. * Support onboarding of new employees. **Requirements** * Bachelor’s degree or Technical Diploma in Gastronomy or related field. * Minimum 3 years of professional kitchen experience. * At least 1 year as Sous Chef or Chef de Partie. * Preferred experience in boutique hotels or restaurants. * Modern culinary techniques. * Food costing and control. * Hygienic food handling (H Certification preferred). * Inventory control. * Service standards. * Gourmet plating and gastronomic presentation.
