




Job Summary: Responsible for kitchen operations, planning, correction, and innovation of daily activities, ensuring quality and hygiene standards while developing staff to achieve customer satisfaction. Ensures high standards of quality and hygiene. **OBJECTIVE** Responsible for kitchen operations, including planning, correction, and innovation of cooks’ daily activities; creates processes to meet established quality and hygiene standards; focuses on staff development to maintain dish quality and standards, thereby achieving customer satisfaction. **GENERAL RESPONSIBILITIES** * Coordinate kitchen operations * Propose improvements to kitchen procedures and workflows to enhance operational efficiency * Attend and supervise inventory counts * Record and monitor production logs * Supervise and control shrinkage/waste * Supervise proper use and cleaning of kitchen equipment to ensure optimal functionality; responsible for reporting any malfunctions or maintenance/repair needs to management * Prepare purchase or warehouse requisitions to supply the kitchen with required inputs * Verify completion of shift-closing tasks: areas tidy and clean; air systems, injectors, and extractors turned off; gas and electricity switched off * Deliver and/or attend departmental training sessions, and propose required training programs * Maintain logs for all kitchen equipment, including preventive and corrective maintenance, jointly with the maintenance supervisor * Prepare monthly performance and budget reports **KNOWLEDGE/EXPERIENCE** * Experience in restaurant openings * Knowledge of ISO 9000 certification and implementation of the Distintivo H * Cost management * Budget preparation * Dish innovation * Shift rotation management **COMPETENCIES** * Leadership * Strategic planning * Organization * Results orientation * Cost and shrinkage control * Operational supervision * Effective communication * Staff development * Proactivity and innovation.
