Job Summary: Casa de los Hojaldres is seeking an experienced Bakery Assistant skilled in large-scale puff pastry dough production, laminating and cutting, and fermentation monitoring. Then this is the opportunity for you! **Casa de los Hojaldres** is looking for your talent as a ***Bakery Assistant*** RESPONSIBILITIES * Preparing feite (puff pastry) dough for large-scale empanada production. * Preparing dough and kneading it to produce puff pastry sheets for the next day’s production. * Laminating, cutting puff pastry, and shaping bread. * Monitoring fermentation and refrigeration times in cold chambers. * Loading baking trays with puff pastry sheets. * Recording daily work activities. * Requesting supplies from inventory. * Cleaning work areas and equipment (laminator, mixer). REQUIREMENTS * Age between 25 and 45 years. * Residence near the commissary (Colonia Ampliación Guadalupe Proletaria, Gustavo A. Madero, CDMX). * Availability to work Monday–Friday, 9 a.m. to 6 p.m., and Saturday, 9 a.m. to 3 p.m. * Knowledge of food safety and hygiene standards. * Proficiency in using scales for precise ingredient weighing. * Critical understanding of dough resting periods and optimal chilling temperatures to prevent puff pastry from burning or losing its layers. EXPERIENCE * 2–3 verifiable years of experience in industrial bakeries, empanada factories, or cafeteria chain commissaries. * Experience operating laminators and mixers. * Expert handling of the dough-to-fat ratio (butter/margarine). * Proficiency in laminating techniques, hands-on experience with “turns” (folding) and required resting times in cold chambers.
