Dynamic. Ability to work under pressure. Knowledge of product rotation. Hygienic food handling (seafood products). Knowledge of preparing: Ceviches, tostadas, aguachiles, cocktails, and others. Use of forms, checklists, and inventories. Labeling. Waste tracking and yield analysis. Disciplined.
