***GRAND HOTEL MEXICO CITY IS HIRING*** **COOK** **Job Objective** Execute food preparation, presentation, and plating to quality standards, following standardized recipes and hygiene and food safety regulations, ensuring an exceptional gastronomic experience for guests or diners. Functions and Responsibilities Production and Operations * Prepare food according to standard recipes and technical sheets. * Ensure aesthetic presentation and consistency for each dish. * Supervise mise en place at your station. * Monitor cooking and service times. * Participate in developing new gastronomic proposals. Quality and Hygiene * Comply with hygiene standards (Distintivo H / GMP / HACCP). * Maintain cleanliness and order in your area. * Verify freshness and quality of ingredients. * Apply proper stock rotation (FIFO). Control and Administration * Assist with inventory management. * Minimize waste and spoilage. * Report shortages or anomalies to the Chef. Service * Coordinate with the team to ensure timely delivery. * Accommodate special requests (allergies, special diets). * Maintain a professional attitude during audits and inspections. Technical Competencies * Advanced culinary techniques. * Knowledge of international and/or gourmet cuisine. * Proficiency in operating professional kitchen equipment. * Basic food-and-wine pairing knowledge. * Mastery of food safety regulations. * Familiarity with molecular or author cuisine is desirable. Experience * 2–4 years in fine-dining restaurants or 4- and 5-star hotels. * Experience in AAA-rated hotels or recognized hotel chains.
