Waste control, compliance with hygiene and safety standards. Operate ovens and proofing cabinets. Ensure proper baking, rotation, and labeling of products. Remove proofing racks from cold rooms for fermentation. Verify raw materials required for decoration. Bread decorating and scoring. Full uniform, proper use of face masks and baker's gloves. Complete records (fermentation, ovens, baking). Knowledge of baking sourdough, puff pastry, and laminated doughs. Control waste and maintain production logs. Timely and accurate bread delivery. Ability to stand for extended periods, handle heavy trays, and withstand high temperatures. Attention to detail to achieve precise doneness. Ability to manage multiple baking processes. Teamwork.
