Key responsibilities include: \- Corn preparation: Loading corn into cooking vats, managing the nixtamalization process, and washing nixtamal. \- Grinding: Operating the mill to crush grain, controlling feed flow and grind fineness to achieve uniform dough. \- Quality control: Evaluating dough texture and quality to ensure compliance with standards. \- Storage: Stacking corn sacks in the warehouse using equipment such as hydraulic pallet jacks. Maintenance and Cleaning: \- Mill maintenance: Dressing or replacing mill stones to maintain grinding quality. \- Deep cleaning: Washing cooking vats, the mill, and keeping the work area clean. \- Lubrication: Performing basic maintenance tasks such as machinery lubrication.
