Main Functions and Responsibilities * Supervise daily production in accordance with recipes, portion sizes, and established standards. * Coordinate kitchen, production, and warehouse staff by assigning tasks and shifts. * Ensure compliance with hygiene, food safety, and GMP (Good Manufacturing Practices) regulations. * Ensure proper receipt, storage, rotation, and control of supplies (FIFO). * Control shrinkage, expiration dates, and waste. * Maintain inventory control of raw materials, supplies, and finished products. * Supervise packaging, labeling, preservation, and distribution processes. * Implement quality controls at each stage of the production process. * Prepare production, shrinkage, inventory, and goal-achievement reports. * Propose process, cost, performance, and quality improvements. * Ensure compliance with health regulations and internal/external audits. * Coordinate preventive maintenance of equipment and facilities. Position Requirements Education: * Technical degree in Gastronomy, Food Science, Industrial Processes, or Bachelor’s degree in Gastronomy, Food Engineering, Industrial Engineering, or related field. Experience: * Minimum 2 years supervising industrial kitchens. * Experience managing operational personnel. * Experience in high-volume production and recipe standardization. Technical Knowledge: * Mass food production. * GMP and health regulations. * Inventory control. * Recipe costing. * Hygienic food handling. * Production planning. * Shrinkage control.
