DE C.V. **Reports to:** Production Manager / Plant Manager **Supervises:** Operators, cutters, packers, and auxiliary staff in the department **Position Objective** Plan, coordinate, and supervise leg department production operations, ensuring compliance with company-established quality, food safety, yield, and productivity standards. **Main Responsibilities** * Supervise the deboning, trimming, cutting, and portioning processes of pork and/or beef legs. * Ensure daily production schedules are met according to work orders. * Verify that personnel follow hygiene, safety, and food safety regulations (GMP, SSOP, HACCP). * Monitor raw material yields and minimize losses. * Coordinate with maintenance for equipment and tool availability and proper operation. * Record and report incidents, downtime, waste, and production progress. * Train and evaluate operational staff. * Ensure proper product identification and traceability. * Assist during internal and external quality or food safety audits. * Promote a safe, clean, and organized work environment. **Specific Activities** * Review the leg department's daily production schedule. * Assign tasks and supervise operational staff. * Validate temperature and condition of raw materials. * Verify weights, cuts, and customer specifications. * Conduct batch and shift yield controls. * Ensure productivity targets are met. * Complete daily production reports and submit them to immediate supervisor. * Coordinate product transfer to packing or storage areas. * Support process improvement initiatives. **Requirements and Experience** **Education:** * Technical degree or Bachelor’s in Food Engineering, Food Technology, Industrial Production, or related field. **Experience:** * Minimum **3 to 5 years** in meat industry production. * Preferred experience specifically in **leg processing** (beef or pork). * Knowledge of **yields, commercial cuts, saw and knife handling**, and **process control**. **Knowledge:** * Good Manufacturing Practices (GMP) * SSOP and HACCP * Traceability and quality control * Industrial safety * Performance indicators (yield, efficiency, waste) **Skills and Competencies:** * Leadership and teamwork * Effective communication * Results-oriented * Analytical and decision-making ability * Organization and discipline * Ability to work under pressure **Position Conditions** * **Location:** CARNES SELECTAS ALI S.A.
