Release of finished product through quality analysis. **Requirements:** **Education:** Food Engineering or Bioprocess Engineering degree, or related field **Experience:** 2 years of experience in a similar position within the food industry Job Objective Ensure that product manufacturing processes comply with critical conditions defined in the Product Design System and the Quality and Food Safety System to meet product specifications. Job Responsibilities Support for HACCP and SQF plans Verify compliance with critical conditions during processing, cooking, and packaging. Monitor refrigeration chamber temperatures. Verify expiration dates of finished products, their rotation, and absence of quality defects prior to packaging release. Support for visual and luminometer wash validation Verify temperatures across various areas (freezers, coolers, processing lines, ham massaging stations, packaging). Monitor sanitizer concentration in the wiener tunnel every 2 hours. Conduct traceability exercises per program requirements and reported quality failures. Verify temperatures during the thawing process, meat, water, time, and records. Measure pH of sausage vats. Audit formulation weights. Release of finished product through physicochemical and sensory analysis for hams, mortadellas, salamis, and Canadian bacon. Monitor residual chlorine levels in all designated areas and the cistern; verify chlorinator functionality. Monitor sanitation of gloves, machinery, and handwashing in packaging areas. Conduct appropriate investigations for process deviations and implement corrective actions. Inspect adherence to all process operating instructions. Release of raw materials for production
