




Job Summary The sushi chef is responsible for preparing sushi dishes according to the restaurant’s recipes and standards, ensuring precision, speed, and aesthetic presentation. Working in a dynamic kitchen environment—often visible to customers at a sushi bar—the sushi chef must maintain an immaculate workstation. Key Responsibilities The primary responsibilities of a sushi chef include: * **Food Preparation:** Meticulously prepare sushi, maki, nigiri, sashimi, and other Japanese specialties, mastering both traditional and modern techniques. * **Ingredient Management:** Select, cut, and prepare fresh, high-quality ingredients—especially fish and seafood—ensuring freshness and proper handling. * **Quality Control and Presentation:** Ensure every dish meets the restaurant’s standards for flavor, quality, and visual presentation before serving. * **Hygiene and Safety:** Maintain a clean, organized workstation and strictly comply with all food hygiene and safety regulations (HACCP). * **Inventory Management:** Assist in managing inventory of sushi-related products and minimize waste. * **Team Collaboration:** Work efficiently with other kitchen and front-of-house staff to ensure seamless service and an exceptional dining experience for customers. * **Innovation (in some roles):** Occasionally collaborate on developing new dishes and adapting the menu according to seasonal availability. Key Skills and Requirements To perform this role effectively, the following skills and competencies are required: * **Culinary Experience:** Prior experience—preferably in Japanese or cold kitchen cuisine—and in-depth knowledge of sushi ingredients and preparation techniques. * **Precision and Attention to Detail:** Ability to work accurately and carefully when preparing and plating dishes. * **Organization and Speed:** Skill in planning work (mise en place) and maintaining efficiency during service, especially during peak hours. * **Teamwork:** Ability to communicate and collaborate effectively with other staff members.
