Knowledge of kneading, fermentation, and baking. Education: Culinary Arts or Baking (preferred). ***Responsibilities:*** Daily supervision and production of savory and sweet breads. Coordination of the bakery team. Production planning. Inventory and sub-recipe control. Real-time process correction. Compliance with quality and hygiene standards. Team training and development. Sourdough techniques involving fermentation, handling high hydration doughs, and breads made with alternative flours and grains (serrano, rye, triticum, yellow soy, purple corn).
