




Job Summary: We are seeking an experienced baker with expertise in artisanal baking and dough handling to produce and supervise daily operations while maintaining quality and food safety standards. Key Highlights: 1. Proven experience in artisanal bakery (boule, baguette, ciabatta) 2. Proficiency in using preferments and sourdough starter 3. Leadership, planning, and daily production organization Work Location: PLAZA UNISUR, OTAY UNIVERSIDAD Work Days: Monday to Friday; rotating Saturdays and Sundays Working Hours: 5:00 AM to 2:00 PM (including a 1-hour break for meals) REQUIREMENTS: • Proven bakery experience (minimum 3 years) • Knowledge of NOM-251 (Hygienic Handling of Food) • Educational background: completed gastronomy degree or bakery technician certification (preferred) • Proficiency in using preferments and sourdough starter (mandatory) • Knowledge of artisanal bread production: boule, baguette, ciabatta, etc. Responsibilities: • Preparation of various bakery items • Production and supervision of dough • Dough fermentation • Operation of convection and deck ovens • Baking and finishing of final products • Control of baking temperatures and times • Shaping of products • Inventory management of assigned area • Cleaning of work area, equipment, and utensils • Maintaining product quality and food safety standards • Handling high-hydration doughs • Leadership, planning, and daily production organization • Adherence to standardized recipes • Ability to apply the rule of three and convert grams and kilograms.
