Knowledge of Food Defense and Mexican Official Standards (NOMs) **Professional Profile** Production Supervisor with experience in the corn-based snack and fried foods industry, focused on meeting production targets, controlling thermal processes, and supporting quality and food safety assurance. Demonstrates operational leadership on the production floor, personnel management, and knowledge of Food Defense and applicable Mexican Official Standards (NOMs) for food. **Professional Experience** * Monitoring of critical parameters: * Frying temperature and time. * Oil control and filtration. * Yields and losses. * Coordination of shift work teams. * Compliance with daily and weekly production schedules. * Waste control and raw material optimization. * Verification of line startup and shutdown procedures. * Reporting of operational incidents and process deviations. * Coordination with maintenance to ensure equipment availability. **Education** * Technical degree or Bachelor’s degree in: Industrial Engineering, Food Engineering, Chemical Engineering, or related field. * Technician in Industrial Processes. * Courses in GMP, HACCP, and team leadership (preferred). **Technical Knowledge** * Good Manufacturing Practices (GMP). * HACCP fundamentals. * Thermal process control in frying. * Handling and storage of raw materials (corn, flour, oil, seasonings). * Loss control and operational efficiency. * Production indicators (OEE, productivity, yield). * Food Defense applied to production facilities. * NOM-251-SSA1-2009 (Hygiene Practices). * NOM-051 (Labeling). * Internal food safety and food defense procedures. **Key Responsibilities** * Supervise adherence to the production plan. * Ensure that the food process complies with established parameters. * Guarantee proper oil usage and replacement. * Supervise operational staff and assign tasks. * Verify GMP compliance on the production line. * Identify and correct process deviations. * Support internal audits. * Promote operational discipline, order, and a food safety culture.
