




Job Summary: We are seeking an experienced baker with expertise in artisanal baking and hygienic food handling to produce and supervise daily bakery operations. Key Highlights: 1. Proven experience in artisanal baking and use of preferments/sourdough starter. 2. Leadership, planning, and organization in daily production. 3. Operation of ovens, temperature control, and adherence to standardized recipes. Job Location: PLAZA UNISUR, OTAY UNIVERSIDAD Work Days: Monday to Friday; rotating Saturdays and Sundays. Schedule: 5:00 AM to 2:00 PM (including a 1-hour break/lunch) REQUIREMENTS: • Proven bakery experience (minimum 3 years) • Knowledge of NOM-251 (Hygienic Food Handling) • Education: Completed gastronomy degree or technical certification in baking (preferred) • Knowledge of preferment and sourdough starter usage (mandatory) • Knowledge of artisanal bread production: boule, baguette, ciabatta, etc. Responsibilities: • Preparation of various bakery items • Production and supervision of doughs • Dough fermentation • Operation of convection and deck ovens • Baking and finishing of final products • Temperature and baking time management • Product shaping • Inventory management of assigned area • Cleaning of work area, equipment, and utensils • Maintaining product quality and food safety standards • Handling high-hydration doughs • Leadership, planning, and organization of daily production • Adherence to standardized recipes • Proficiency in using the rule of three and converting grams to kilograms.
