




Operational Manager \- La Noria Restaurant Requirements * Minimum 5 years of experience as Operational Manager or Assistant Manager in traditional or prestigious Mexican restaurants. * In-depth knowledge of Mexican and Pueblan cuisine. * Proven experience leading large teams. * Proficiency in operational, administrative controls and KPIs. * Strong floor presence and attention to detail. * Flexible availability. * Desired: H certification, experience managing events and banquets. Position Objective To lead and ensure the comprehensive operation of La Noria Restaurant, maintaining the highest standards of quality, service, Mexican tradition and profitability, aligned with the restaurant’s prestige and legacy. Key Responsibilities * Supervise daily operations across kitchen, dining room, bar, events and warehouse. * Guarantee an exceptional guest experience consistent with La Noria’s positioning. * Ensure strict compliance with hygiene, safety and quality standards. * Control costs, inventory, standard recipes, waste and suppliers. * Analyze sales, KPIs, average ticket, turnover and profitability. * Lead, train and evaluate the operational team (kitchen and service). * Preserve and convey the tradition of Pueblan Mexican cuisine. * Handle complaints and special situations with tact, presence and leadership. * Coordinate special events, group bookings and banquets. * Prepare weekly and monthly operational reports for management. * Propose continuous improvements without compromising the restaurant’s historical essence.
