




Execute and lead culinary operations within a Fine Dining concept, ensuring a high-end gastronomic experience through the proper application of advanced techniques, precision in execution, excellence in plating, absolute quality control, and respect for the restaurant’s culinary concept. Key Responsibilities * Execute and supervise the preparation of Fine Dining dishes according to standardized recipes, advanced techniques, and guidelines set by the Executive Chef. * Ensure absolute consistency in flavor, presentation, temperature, and service timing. * Maintain standards of excellence in artistic plating and visual detail. * Coordinate and lead the assigned station during service (pass). * Comply with, and enforce strict adherence to hygiene, food safety, and sanitation regulations (NOM-251 / Distintivo H). * Control portioning, waste, and optimal utilization of premium ingredients. * Verify thorough cleaning and proper operation of kitchen equipment. * Actively participate in inventory management, requisitions, and ingredient control. * Support recipe standardization, technical sheets, and cost calculations. * Collaborate in the development of new dishes, tasting menus, and seasonal offerings. * Maintain discipline, order, and constant communication throughout service. Job Requirements Education * Technical degree or bachelor’s degree in Gastronomy (preferred). Experience * Minimum 2 years as a cook in high-end restaurants, Fine Dining establishments, or author-driven cuisine venues. * Proven experience managing kitchen brigades. Technical Knowledge * Advanced techniques of classical and contemporary cuisine (stocks, sauces, precise cooking methods). * Handling of premium products, seasonal ingredients, and preservation techniques. * Fine Dining plating with aesthetic and conceptual focus. * Portion control, waste management, and cost control. * Hygiene, food safety, and sanitation regulations. * Knowledge of international, author-driven, or tasting menu cuisines. * Experience working stations and operating under Michelin or similar standards (desirable).
