Focused on staff management and kitchen processes. **HOTEL DEL GOBERNADOR** Seeking: Chef A - Second in Command **Objective:** Contribute your skills to the restaurant’s successful service and production. **Requirements:** - Previous experience in a similar position - Flexible availability - Excellent personal presentation - Passion for cooking and interest in Yucatecan cuisine - Experience in staff management **Responsibilities:** **-** Work with the kitchen team on cold or hot line (pans, griddle, fryers, or grill) - Production and pre-production of various preparations - Weighing and preparing recipes according to the Executive Chef’s instructions - Inventory management, FIFO, and monitoring of hygiene and cleaning procedures - General kitchen cleaning **Requirements:** * Technical high school diploma in Food Sciences * Ability to follow standardized recipes * Knowledge of hygienic food handling compliant with H certification or equivalent * Experience in large-scale production, including portioning poultry, red meats, fish and seafood, classic sauces and dressings, among other high-volume preparations.
