Ensuring compliance with sanitary regulations A private second-level healthcare facility is seeking a Kitchen Leader (Production Supervisor) for its Food Services Department. Objective: To supervise the preparation, processing, and preservation of staple foods, ensuring **quality** standards, food safety (**hygiene** regulations), and **inventory** control. Manage the kitchen team, plan production prior to service, and optimize raw material usage. Main Responsibilities: * Participate in food preparation, cooking times, portion sizes, plating, and dish temperatures. * Production Management: Supervise cutting, handling, storage, and processing of ingredients. * Identify food availability. * Fulfill food requirements from the medical department. * Ensure food is prepared according to established standards and sanitary regulations. * Monitor raw material and work-in-process inventory levels. * Team Leadership: Coordinate kitchen staff activities and ensure efficient operations. * Maintenance: Ensure proper functioning of machinery and facilities. * Participate in training courses aimed at improving service processes. Requirements: Experience and Knowledge: Food handling and preparation. Hospital diets and NOM-251. Use of kitchen utensils and equipment. Technical degree in Gastronomy, Food and Beverage Technician, or related field. Gross monthly salary: $12,500 plus punctuality and attendance bonus; grocery vouchers starting from the second month; birthday bonus. Statutory benefits from day one. Biweekly payroll payments.
