




Position Summary: Responsible for preparing cold foods, applying decorative techniques, and managing the service of various items for the restaurant and banquets. Key Highlights: 1. Experience in preparing cold foods and decorative techniques. 2. Knowledge of standard recipes and preparation of cocktails and sauces. 3. Preparation of breakfasts and meals, including side dishes and dressings. 3 years of experience in this position. Reports to the chef for cold food preparation in the kitchen. **Responsibilities:** Knows standard kitchen recipes. Prepares cold foods for the restaurant or banquet service. Knows and applies decorative techniques in buffet presentation. Knows and correctly prepares all cold menu items. Prepares salads. Prepares cocktails. Prepares sauces. **Prepares the following items:** sandwich, radishes, cheese croutons, etc. Checks the walk-in cooler, refrigerators, and cold table daily. **Controls and serves the following items to waitstaff:** fruit plate, fresh pineapple, candied fruit, pies, cakes, flans, gelatins, etc. **Breakfast Preparation:** Side dishes Guacamole Mise en place Coulis Chutney Fruit Molletes Hot cakes **Meal Preparation:** Salads Vinaigrettes Dressings Mise en place Service sauces Essential Requirements: Availability to rotate shifts Live near the work area (Tlalpan) Position Type: Full-time Salary: $14,000\.00 per month Work Location: On-site employment
