Maintain cleanliness and organization of the work area Main Responsibilities: * Monitor and control the **cooking of the trompo** for al pastor meat. * Slice the meat into thin strips directly from the trompo. * Serve the meat in tacos, tortas, or other dishes. * Keep the work area clean and organized. * Replace the trompo and verify that the meat is properly marinated and in good condition.
