




F&B Manager at Residence Inn by Marriott Playa del Carmen We are seeking an experienced F&B Manager with advanced skills in hotel operations to join our team. Objective.\- Lead, coordinate, organize, supervise, select, and train staff; operate food and beverage activities by applying setup standards, menu creation, and food safety and hygiene protocols, ensuring guest satisfaction. Cost and control expenses. Lead the F&B team to achieve objectives: cost control, excellent service, and presentable food stations. Supervise and direct client events, ensuring high-quality service and optimized setups. Responsibilities.\- * Place purchase orders (POs) for supplies and products based on occupancy levels for various suppliers. * Cost and develop menus, incorporating regional food items according to the business unit’s location, and keep them updated. * Coordinate and operate events. * Interact with vendors and suppliers (quotations, pricing, purchase orders, onboarding). * Control inventories, shrinkage, and supplies for each consumption center. * Ensure timely and accurate completion of HACCP forms (Marriott F&B audit). * Conduct internal and external audits, including quarterly Marriott audits.
