Executive Chef \| Los Danzantes Oaxaca
**Los Danzantes Oaxaca** is seeking an **Executive Chef/Chefess** with solid experience in contemporary Mexican cuisine, operational leadership, and deep sensitivity toward Oaxacan gastronomy, smoke-based cooking, local ingredients, and sustainability.
We seek a candidate capable of directing kitchen operations with order, discipline, creativity, and strategic vision—maintaining high standards of quality, consistency, food safety, and gastronomic experience.
Position Objective
To lead the comprehensive kitchen operations of Los Danzantes Oaxaca, ensuring proper execution of menus, processes, costs, production, quality standards, and team development—all aligned with the restaurant’s philosophy: **Ritual Gastronómico de México**.
Key Responsibilities
Lead, supervise, and coordinate the kitchen team in daily operations.
Guarantee the quality, presentation, flavor, temperature, and consistency of each dish.
Develop gastronomic proposals aligned with contemporary Mexican cuisine, local and seasonal ingredients, and Oaxacan tradition.
Oversee mise en place, production, service, inventory, waste tracking, and cost control.
Ensure compliance with hygiene, food safety, cleanliness, and good manufacturing practices.
Collaborate closely with management, operations, procurement, warehouse, service, and bar teams to maintain efficient operations.
Train, mentor, and evaluate the kitchen team, promoting discipline, respect, teamwork, and continuous improvement.
Ensure responsible ingredient usage, waste reduction, and proper supply management.
Participate in developing seasonal menus, special events, and gastronomic experiences.
Required Profile
Proven experience as Executive Chef/Chefess, Head Chef, or equivalent role in high-end restaurants.
In-depth knowledge of Mexican and Oaxacan cuisine, traditional techniques, and smoke-based cooking.
Creative ability to develop dishes with strong identity, technical mastery, and gastronomic sensibility.
Experience leading kitchen teams.
Knowledge of cost control, inventory management, production, waste tracking, and recipe standardization.
Familiarity with hygiene, food safety, and food handling regulations.
Ability to work under pressure and maintain order during high-volume service periods.
Clear communication, firm leadership, and capacity for operational decision-making.
