Culinary Leadership** * Supervise proper dish preparation according to Ministry’s standard recipes. **2. Operations and Control** * Plan daily and weekly kitchen production. * Supervise inventories, waste, and input rotation (FIFO). * Coordinate with the Administrator regarding purchases and input requirements. * Ensure efficient use of equipment and facilities. **3. H Certification and Regulatory Compliance** * Ensure compliance with **NOM-251-SSA1-2009**. * Supervise proper food hygiene, handling, and storage practices. * Validate cleaning logs, temperature records, sanitization logs, and pest control logs. * Prepare the team for internal and external audits. **4. Leadership and Team Management** * Lead and train kitchen staff. * Assign roles, shifts, and responsibilities. * Evaluate performance and support team development. * Maintain a respectful, orderly, and collaborative work environment. **5. Cross-Department Coordination** * Coordinate with the Captain regarding service timing and incident resolution. * Report deviations, needs, or improvement proposals to Management. * Support special events, promotions, and magical seasons. **6.
