Ensure control and integrity of food and beverage costs through supervision of inventories, consumption, purchases, transfers, and variances, identifying deviations and proposing corrective actions. * Audit physical inventories of food, beverages, and supplies. * Review and analyze actual costs. * Validate standard recipes, portion sizes, yields, and servings. * Identify shrinkage, waste, discrepancies, and potential operational leaks. * Review purchases, receipts, transfers, and warehouse withdrawals. * Monitor cost and consumption variances. * Participate in closing procedures and periodic internal control reviews.
