Key responsibilities1) Operations and guest experience * Ensure impeccable service: guest reception, service sequence, timing, complaint handling, and closing procedures. * Supervise dining room setup, standards, cleanliness, ambiance, and operational discipline. * Ensure effective coordination among kitchen, bar, and front-of-house (order transmission, timing, shortages, prioritization). 2) Administration and financial control * Monitor sales, cash drops, deposits, cash/terminal controls, and internal payment policies. * Manage food and beverage costs with a focus on profitability: portioning, waste, purchasing, pricing, and sales mix. * Prepare and track KPIs: daily/weekly/monthly sales, covers, average check, costs, profit, expenses. * Participate in budgeting, forecasting, and managerial reporting; identify improvement opportunities. 3) Purchasing, inventory, and suppliers * Manage procurement with planning: par levels, FIFO, rotation, expiration dates, and input quality control. * Negotiate supplier terms, delivery timelines, pricing, and standards; verify receipt and quality. * Supervise periodic inventories (food, beverages, wine, supplies) and ensure minimal variances. 4) Wine, beverages, and specialized service * Know and manage the wine program: wine list, rotation, storage, glassware, recommendations, and food pairings. * Train staff on suggestive selling and wine service (opening, glass selection, temperatures, recommendations). * Maintain bar standards in coordination with the designated bar supervisor. 5) Human capital and leadership * Recruit, onboard, and develop staff: training, role definition, scheduling, performance evaluation, and discipline. * Foster a professional work environment, clear communication, and adherence to internal regulations. * Conduct regular performance meetings and weekly follow-ups with area leaders. 6) Quality, safety, maintenance, and compliance * Ensure compliance with hygiene, food safety, security, and internal guidelines. * Supervise preventive and corrective maintenance (equipment, refrigeration, gas, plumbing, etc.) and logbooks. * Maintain basic documentation control (forms, checklists, incident reports, internal audits). 7) Commercial activities and reputation * Ensure digital presence and reputation (online reviews, comments, customer communication as applicable). * Drive sales through experiences, group bookings, and events (quotations, policies, operational coordination).
