




Job Summary: We are seeking a Meat Cutter with \ Key Highlights: 1. Mastery in Texas-style meat cutting and portioning. 2. Pit control and technical handling of primal cuts. 3. Excellent work environment and development of artisanal skills. The Meat Cutter is responsible for the final stage of the BBQ experience. We seek someone with "artisan's hands" to handle delicate proteins and the discipline to maintain consistent temperatures. **Primary Responsibilities** * **Cutting Mastery:** Slice and portion meats (brisket, ribs, picanha, sausages) according to Texas-style weight and presentation standards. * **Pit Control:** Monitor and maintain proper smoker temperature, managing airflow and wood fuel to ensure even cooking. * **Product Handling:** Receive, clean, and technically prepare primal cuts. * **Hygiene and Safety:** Maintain the cutting area and equipment (knives, cutting boards, thermometers) under strict sanitation standards. **Work Schedule:** * Monday, Tuesday, and Thursday: 1:00 pm to 11:00 pm * Saturday and Sunday: 10:00 am to 7:00 pm **What We Offer:** * Excellent work environment * Family-like treatment and a united team * Delicious meals every day * Statutory benefits after the probationary period * Two days off * Tips **Candidate Requirements** * **Age:** Over 21 years old. * **Experience:** Advanced proficiency in knife handling and knowledge of meat terminology.
