Hygienic food handling, Standard NOM-251, H Distinction. Knowledge of diets and special menus. Reduction and control of food waste. **RESPONSIBILITIES:** Supervise food preparation and service during the shift. Coordinate and monitor cafeteria operational staff. Verify cleanliness, order, and hygiene in work areas. Ensure compliance with hygiene, quality, and service standards. Maintain and review food safety logs. Monitor processes related to the H Distinction and NOM-251. Resolve operational incidents. Maintain effective communication with the work team.
