Job Description Food and Beverage Cost Coordinator (A\&B) (Company specialized in restaurants, bars, banquets, hospitality or restaurant chains) Reports to: General Accountant Job Objective Ensure full control of Food and Beverage costs across all units/branches, maintain target contribution margins, control waste and inventories, standardize recipes and costs, and serve as the primary financial support for operational kitchen, bar, and banquet teams. Main Responsibilities 1\. Design, update, and control standard recipes (bill of materials) for all menu dishes and beverages. 2\. Calculate and keep updated the theoretical cost of each menu item (food cost and beverage cost). 3\. Perform daily/weekly/monthly actual costing and calculate variances (actual vs. theoretical cost). 4\. Identify and analyze causes of shrinkage, theft, portioning errors, waste, and deviations. 5\. Manage perpetual inventory and lead cyclic and general physical counts across all units. 6\. Validate purchase requisitions, purchases, and goods receipts (compare prices vs. contract and market). 7\. Develop and manage the annual A\&B cost budget by unit and consolidated. 8\. Generate daily/weekly/monthly reports on: o Actual vs. target Food Cost and Beverage Cost o Waste by category and branch o Consumption of critical inputs (meats, seafood, premium spirits) o Contribution margin per dish and product family 9\. Actively participate in menu changes: cost calculations and sales price recommendations to meet target margins. 10\. Implement and monitor menu engineering together with Executive Chef and commercial team. 11\. Identify and propose savings opportunities (supplier changes, ingredient substitutions, contract renegotiations, portion reductions without affecting perception). 12\. Control event and banquet costs (actual vs. quoted cost). 13\. Train unit managers, chefs, and bartenders in cost control and proper system usage. 14\. Implement and audit control procedures (portioning, pre-preparations, storage, FIFO rotation). 15\. Reconcile inventory with accounting and participate in monthly closings. Ideal Candidate Profile Education **Bachelor’s degree in Accounting, Finance, Business Administration, Gastronomy, or Industrial Engineering** Desirable diploma or certification in Food and Beverage Cost Management Professional Experience **Minimum 5 years exclusively in Food and Beverage cost control** Proven experience in restaurant chains, 5-star hotels, banquets, or dark kitchens **Experience managing bill of materials for at least 80\-100 different dishes Technical Skills Required** Advanced Excel (pivot tables, macros, Power Query, dashboards) **Specialized A\&B systems: Marketman, Cheftec, Apicbase, Cost Brain, SoftRestaurant, Micros, Oracle Hospitality, or similar** Menu engineering and dish profitability analysis **Calculation of theoretical and actual food cost and beverage cost Key Performance Indicators:** Prime Cost, waste %, spoilage, inventory turnover Key Competencies Highly **analytical thinking and obsession with detail** Ability to work with chefs and operational staff (knows how to “speak kitchen”) **High tolerance for extreme pressure during month-end closings and menu changes** Proactive in questioning high costs and proposing viable solutions Employment Type: Full-time Salary: $30,000.00 per month Benefits: * Educational assistance * Savings fund * Life insurance * Grocery vouchers Work Location: On-site employment
