Disciplined, organized profile committed to quality We are seeking an **Operational Chef**, responsible for executing and supervising food preparation with a focus on fresh seafood, ensuring compliance with operational standards. The role involves proper handling of raw ingredients, strict temperature control, recipe standardization, portioning, mise en place, and service timing, as well as coordinating the kitchen team to ensure consistency in every service. The candidate will be responsible for maintaining order, cleanliness, and food safety at all times, adhering to Good Manufacturing Practices (GMP), hygienic food handling protocols, and inventory control. Proven experience in seafood cuisine, knowledge of cold bar techniques (aguachiles, ceviches, oysters, raw preparations), a keen sense of precision in flavor balancing, and the ability to work under defined, repeatable standards are required.
