




**San Siro Restaurant \| La Paz, B.C.S.** **Area:** Kitchen / Production (Pizzeria and Bakery) **Reports to:** Chef / Sous Chef / Pizzeria-Bakery Manager / Operations Management **Schedule:** Rotating (according to operations) **Position type:** Operational Position purpose Consistently prepare doughs, pizzas, and bakery products in accordance with San Siro’s standards, ensuring quality, timing, organization, and food safety. This position requires technical control of fermentation, oven handling, and production planning to guarantee flavor, texture, and presentation. Key responsibilities * **Dough preparation and fermentation** * Prepare doughs (pizza/bread) using standardized recipes: hydration, kneading, resting, balling, and fermentation. * Control fermentation and maturation (timing, temperature, yeast/pre-ferment handling). * Adjust parameters in a controlled manner according to weather conditions (heat/humidity) to maintain consistency. * **Pizza production** * Shape, stretch, and assemble pizzas according to specified weights and ingredient standards. * Operate the oven: preheating, loading, rotation, and cooking control. * Ensure final quality: properly baked base, correct crust, balanced toppings, temperature, and presentation. * **Bakery (if applicable to operations)** * Produce table bread, focaccia, or other items defined by the kitchen. * Bake, cool, store, and rotate products to maintain freshness. * Schedule restocking based on consumption and service peaks. * **Mise en place, organization, and control** * Maintain a fully stocked station: flours, sauces, cheeses, trays, utensils, boxes/packaging (if applicable). * Control portioning, FIFO rotation, labeling, and proper storage. * Report shortages, waste, quality deviations, or equipment failures. * **Hygiene, food safety, and safety** * Comply with hygiene protocols: handwashing, sanitization, cross-contamination control. * Safely handle ovens, mixers, cutters, peels, and hot utensils. * Perform deep cleaning of station and equipment at closing, using checklist. * **Teamwork and standardization** * Coordinate with kitchen and service teams regarding order timing and service sequence. * Participate in recipe testing/improvements under the kitchen manager’s authorization. * Support training of assistants when assigned.
