




Ensure that the restaurant operates efficiently, while maintaining a high level of production, productivity, quality, and customer service standards. RESPONSIBILITIES: 1. Purchasing: Supervise and control suppliers assigned by the Purchasing department. Ensure quality, quantity, and service aspects from suppliers. Monitor appropriate purchase volumes according to operations. Supervise billing and payment processes to suppliers. Handle minor cash payments. Ensure compliance with hygiene program guidelines. 2. Warehouse: Daily supervision of warehouse entries and exits, supervise product rotation, and be responsible for conducting weekly and monthly inventory counts. 3. Production: Supervise that production planning and volume are adequate for operations. Monitor food quality (color, flavor, texture, and presentation). Supervise adherence to established preparation times. Responsible for the physical condition and maintenance of equipment, utensils, and facilities. Quantify waste. 4. Sales Floor: Supervise station assignments and rotations. Supervise the performance of captains, servers, and runners. Attend to, resolve, and follow up on customer comments, suggestions, and complaints. Supervise buffet quality and presentation. 5. Human Resources: Request, track, and select all new hires. Supervise discipline, expectations, and courteous treatment in accordance with a positive organizational climate. 6. Administration: Monitor and ensure budget compliance: sales, costs, expenses. Place timely orders and control supplies. Responsible for employee dining area (where applicable). Validate with the Administrative Manager that all supplier invoices for payment are up to date.
