Maintain an organized, clean, and efficient kitchen while following base recipes and applying technical skill and creativity. **1\.\- REQUIRED TECHNICAL KNOWLEDGE** * Mastery of **contemporary Mexican cuisine** (suckling pig, baby pig, tacos, tlacoyos, moles or stews). * Experience with **premium meat cuts** (rib eye, New York, arrachera) and cooking temperatures. * Proficiency in **fresh pasta and base sauces** (arrabiata, alfredo, fungui). * Knowledge of **European techniques**: braising, confit, reductions, risotto, purées, stocks, and paellas. * Ability to **plate fine dishes** with bistro or wine bar-style presentation. * Control of **costs, waste, and mise en place**. * Proper use of **ovens, griddles, and grills**. **2\.\- SKILLS AND ATTITUDE** * Positive leadership and clear communication with team members. * Clean, organized, and precise work habits. * Ability to perform under pressure during service. * Passion for quality, attention to detail, and dish aesthetics. * Punctuality, commitment, and respect for base recipes.
