Knowledge of kneading, fermentation, and baking. Education: Gastronomy or Bakery (preferred). ***Responsibilities:*** * Daily supervision and production of savory and sweet bread. Coordination of the bakery team. Production planning. Inventory and sub\-recipe control. Real\-time process correction. Compliance with quality and hygiene standards. Team training and development. Sourdough bread techniques involving fermentation, handling of high hydration doughs, and breads made with alternative flours and grains (serranero, rye, triticum, yellow soy, purple corn).
