**Tao de Jade** is a farm-to-table production project. Its purpose is food self-sufficiency; teaching organic agriculture and transforming these products to increase their value. It is located in Cuata, Nayarit, and supplies the Hotel and Wellness Retreat Center, **Mar de Jade** in Chacala, Nayarit. We are seeking an **Industrial Kitchen Chef** with experience in **100% natural preservation processes**, without chemicals, preservatives, or artificial colorings. Our focus is primarily on organic products, so experience in large-scale clean and healthy cooking is essential. The chef will be responsible for ensuring product quality, safety, and shelf life from raw material receipt through to final packaging, leading a team within a conscious and sustainable production environment. **Main Responsibilities** * Implement and supervise natural preservation methods: canning, freezing, and dehydration. * Develop and standardize organic recipes free of chemicals and harmful preservatives. * Ensure compliance with food safety standards and HACCP. * Control quality of finished products (taste, texture, nutrition). * Manage inventory and apply rotation systems (FIFO). * Reduce costs and waste through creative use of seasonal ingredients. * Lead, train, and supervise kitchen staff. * Cold kitchen: Fresh-packaged products, cold-pressed juices, ice cream production. **Requirements** * 3\+ years of experience in industrial cooking at pilot scale (intermediate artisanal level) * 2\+ years in a leadership role. * Proven experience in developing **organic and natural** food products for sale or distribution. * Operation of industrial equipment (vacuum sealing, high-volume cooking systems, dehydrators, etc.). **Skills and Attributes** * Mastery of preservation techniques (high/low acidity, freezing, and dehydration) without chemical additives. * Passion for organic, healthy, and sustainable food. * Organized, detail-oriented, and able to work under pressure. * Creativity to innovate in natural products. * Strong communication and team leadership skills. * Desirable: knowledge of allergens, fermentation, and baking.
