Food safety certification desirable (HACCP, Distintivo H, ISO 22000). **Work Experience** ----------------------- * Minimum of 2 years as a chef or lead cook in industrial cafeterias, hospitals, or institutional food service. Experience managing menus for special diets (low-sodium, soft, diabetic, etc.). **Education and Specific Knowledge** ----------------------------------------- * Planning of balanced menus and special diets. Hygiene and sanitation regulations (NOM-251-SSA1-2009). Inventory, cost, and waste control. National and international culinary techniques. Portion and production time control. Supervision of kitchen staff and shift coordination. Knowledge of food quality and safety control. **Main Responsibilities** --------------------------------- * Prepare and supervise daily food production according to the established menu. * Ensure food preparations meet nutritional and dietary specifications. * Control food quality, presentation, and temperature before distribution. * Coordinate and train kitchen staff in good manufacturing practices and hygiene. * Supervise proper use of raw materials, preventing waste and optimizing resources. * Participate in weekly or monthly menu planning with nutritionists and administrators. * Monitor compliance with food safety and hygiene regulations. * Maintain cleanliness and order in all kitchen areas. * Manage inventory and supply requisitions.
