Food safety certification desirable (HACCP, Distintivo H, ISO 22000). **Work Experience** ----------------------- * Minimum of 2 years as a chef or lead cook in industrial cafeterias, hospitals, or institutional food service. Experience managing menus for special diets (low-sodium, soft, diabetic, etc.). **Education and Specific Knowledge** ----------------------------------------- * Planning of balanced menus and special diets. Hygiene and sanitation regulations (NOM-251-SSA1-2009). Inventory, cost, and waste control. National and international culinary techniques. Portion and production time control. Supervision of kitchen staff and shift coordination.
